The production of white tea is very different from green tea. Firstly, the leaves come from a special varietal tea bush called Narcissus or chaicha bushes. Secondly, the leaves are not steamed or pan-fired as is the case in green tea. These leaves are dried and withered in the sun . If mechanical drying is required the leaves are baked (not fired) at temperatures less that 40’C. Thirdly, only special ‘two leaves and a bud’ are selected. These leaves must show a very light green almost gray white color and be covered with velvet peach fuzz down. The ideal is a leaf or two being wrapped around a newly developing shoot. These shoots are plucked and segregated from the rest of the leaf being plucked. These leaves are then naturally withered and the painstaking process on final manual selection occurs.

About Silver Needle White Tea (Yin Zhen) Tea

Yin Zhen is hand-plucked in the first two weeks of March and made using century old techniques. The flavor of this tea is light, sweet and pleasing with velvety, smooth liquor that is the characteristic of a silver needle white tea. Our Yin Zhen is a very high-grade white tea, so the flavor and the texture of the tea will be more apparent than in more common grades. Enjoy Yin Zhen on a quiet afternoon.
White tipped Silver Needle is one of the highest quality white teas, and is picked during the spring before the buds open to preserve its tenderness. Exquisite and delicate, the tea produces a very pale yellow brew and has a fresh, sweet fragrance with traces of citrus. This tea has high concentrations of polyphenols (antioxidants that help fight against cancer-causing radicals and heart disease). Steep the leaves in a tall glass to get the most out of this tea's great show and taste.
This particular Chinese white tea holds a very graceful form. The leaves are even, strong, straight, and full with fine white hairs. The Yin Zhen is only made with buds. The liquor holds a light apricot color and the taste is fresh and delicate with a pleasant high fragrance. This tea is a very good daily tea. It is also recommended as an efficacious remedy for the hives.


Yin Zhen's fragrance is refreshingly sweet while the taste is clean, smooth and very delicate.


Brewing Recommendation:

Add fresh boiling water over one tea bag in a cup.  Steep for 3~5 minutes.   Remove tea bag before serving.
